The single most important thing to get right on this ingredient is the ratio, because it changes the citrulline you are actually buying. In a 2:1 composition citrulline is 72.3% of the mass; in a 1:1 salt it is 56.6%. An 8 g 'citrulline malate' dose therefore delivers either 5.8 g or 4.5 g of citrulline depending on which grade landed in the blender.

There is a CAS trap here that catches even experienced buyers. CAS 54940-97-5 corresponds to the 1:1 salt (C10H19N3O8, MW 309.27 in PubChem), yet the whole sports-nutrition trade prints it on 2:1 documentation. Write the ratio next to the CAS on your specification so an auditor cannot read the CAS as a stoichiometry claim.

Malic acid is what makes this form work in beverages: it brings sourness and a sharply lower solution pH than free citrulline, which is exactly why RTD and effervescent formats choose the malate over the free amino acid — and also why it needs a citrus or berry flavour system rather than a creamy one.

The malate load has to be counted in your total acid budget. At an 8 g dose the 2:1 grade contributes roughly 2.2 g of malic acid, which is enough to move the pH and titratable acidity of an unbuffered drink on its own.

The malic acid in commercial citrulline malate is usually DL-malic acid, not L-malic. If your label, your organic certification or your destination market cares about that distinction, ask for it in writing — it is rarely stated unless requested.

01Is this genuinely 2:1, and how do I verify it?
It is supplied as the 2:1 grade. Verify it the way an auditor would: ask for the batch COA showing citrulline and malic acid assayed separately. A true 2:1 sits near 72% citrulline and 28% malic acid; a 1:1 salt sits near 57% and 43%. The two assays together are the only proof of ratio.
02Why does the CAS number point to a 1:1 salt?
Because CAS 54940-97-5 was assigned to citrulline malate as a 1:1 salt, while the sports-nutrition market standardised on the 2:1 ratio and kept using the same CAS. It is an industry-wide inconsistency, not a defect in this lot. We recommend writing 'CAS 54940-97-5 (citrulline malate), supplied at 2:1 ratio' on your own specification so nobody reads the CAS as a stoichiometry claim.
03Should I buy citrulline malate or free L-citrulline?
Free citrulline if you want the highest citrulline per gram and a neutral taste; malate if you want a beverage-friendly acidic form and are happy to carry the malic acid. We stock both, so send us your target citrulline per serving and we will quote the cheaper route to it.
04Is the malic acid L- or DL-?
Commercial citrulline malate normally uses DL-malic acid. If your label or your destination market needs L-malic specifically, say so in the RFQ — we will get it confirmed in writing by the manufacturer rather than assumed.
